The top layer is a white cake with coconut cream filling, the bottom layer is a chunky carrot cake filled and covered with cream cheese frosting. It was pretty delectable if I do say so myself. :)

Happy Birthday Rob!
Ok... I need to apologize! It has been FOREVER since I have posted. Honestly, I think I burned myself out and needed a break. However, I have a new project. I was asked to make my little sister's wedding cake for her wedding next Thursday. I have never made a stacked cake before so this was all new to me. I have been practicing flavors and trying to get the stacking thing down. Here is my first endeavor. I made this for one of my favorite people's birthday, Robert May. Decorations... courtesy of my wonderful, artistic husband. Don't we make a good team?! :)
