Crepes for Dinner

This is something I just threw together for dinner tonight. It is a combination of ricotta, mozzarella, and asiago cheeses, spinach, stewed tomatoes, garlic, and chicken all wrapped up in a basil crepe. I was afraid it would turn out to be a little dry since it didn't have a sauce but it was surprisingly rich.



Basil Crepes

2 large eggs
1 cup milk
1/3 cup water
1 cup all-purpose flour, preferably bleached
1/4 teaspoon salt
1 T dried basil
2 tablespoons butter, melted, plus 2 to 3 teaspoons butter for coating the pan
